5- David Bawden: Hello Nora,
There are a number of pasty recipes out there as well as variations in their contents so I'm not sure what was included in your family recipe. I've read that in Cornwall the devil would never cross the Tamar River into Cornwall for fear of being made into a pasty.
Mom never used a recipe but this approximates hers for 10 pasties.
Crust: This varies from the recipe on the Crisco can to your favorite one for pies.

Filling:


1. Pound and half of meat cut up in small cubes (I use top sirloin these days but in leaner days we used chuck)
2. 6-8 potatoes peeled and shredded with large grate (mine has 1/2 inch grates)
3. one onion grated
4. salt/pepper
5. rutabaga or carrots grated
6. tablespoon butter or margarine (tucked into filling when assembling for richness)
Assembly/Cooking:

1. crust filled with fillings and dab of butter - wet edges with cold water
2. fold crust to center or over top one side, press together making zigzag pattern and trim excess off with knife
3. preheat oven to 425
4. 20 minutes at 425 or until lightly brown
5. 40 minutes at 350
6. cool and serve with gravy or catsup and a side of coleslaw
I'd be interested to hear about other variations on your pasties. Our family will be having another PASTYFEST this year in April. In the last one we invited all the clan to be judges while her grandchildren made the pasties. We even had a trophy and scoring guide for the one that tasted most like mom's.

6- Nora: Dave: Thanks for the recipe. Your recipe varies slightly from mine. I cut the ingredients into chunks instead of grating. Sometimes adding a sprinkling of flour to the pasty before folding and crimping. Like my Mother and yours, I do not use a recipe either. I do remember Mom using left over stew as well. She had made a few sweet versions too....but not both in the same pasty as is traditional.....Nora
